Dover sole has a dark brown skin and a longer and narrower shaped body than other flatfish. Dover sole has a crisp white flesh, firm to touch with an almost sweet taste.It is often too firm to cook immediately after being caught so best after a couple of days when the texture and flavour is enhanced.Your fish will be sent gutted and head on unless you specify otherwise.We can fillet please ask.

Note the yield is approximately 50% so a 400g fish will give 200g of fillets, a good portion size
